You Will Love This!

Today I'm going to share a recipe I served for Christmas dinner. They are always a big hit and they are as beautiful to serve as they are tasty! Warning - they are tremendously hot when they are done, so let them cool 2-3 min. before serving and thank you to Paula Deen who shared this recipe!!!!

Tomato Tarts - makes 2 dozen

1 sheet frozen puff pastry from a 17 1/4 oz. pkg.
olive oil
1/2 cup grated white Cheddar cheese
4-5 Italian plum tomatoes, cut into 1/4" slices
salt & pepper
2 tablespoons fresh thyme leaves, finely chopped
1/2 cup freshly grated Parmesan cheese

Preheat oven to 375. Spray a baking sheet with vegetable oil cooking spray. Meanwhile remove the puff pastry from the freezer and allow to thaw for 20 minutes.

Unfold pastry on counter and using a 1 1/2" or 2" biscuit cutter, cut out rounds of dough. Place the puff pastry rounds on the prepared baking sheet. Prick the surface of the pastry with a fork. Brush each round lightly with olive oil and top with a small amount of the Cheddar cheese, then with a tomato slice. Sprinkle salt & pepper to taste over tomato, then sprinkle a pinch of thyme and about 1 teaspoon of Parmesan cheese.

Bake about 15 minutes. Let cool for 2-3 minutes before serving.

The vase doesn't get to choose what kind of flowers are put into it.

As Christian's, we are servants of the Most High God, not little gods who aught to expect/demand that everything in life be happy, easy and go their way. If you became a Christian so that everything would go the way you want and would be easy, you had better check whether you are saved after all. He called us to follow after Him, to emulate Him, and to expect no better than He had. He had no home, a rock for a pillow, no earthly wealth, multitudes of unjustified persecutions and ultimately, was killed.

So, with this in mind, let's reflect on our attitudes toward the "difficult people" in our lives. Maybe even our marriages or relationships with a family member. Where did we get the idea that we should have everything our way and easy? Where did we get the idea that if we aren't "happy" or things get "too hard" we get to walk away, default on our vows even?

As those bought by the blood of the Lamb, servants of God, we don't get to leave marriages and dump others in our lives simply because we "aren't happy" or because it's "too hard". We chose our spouses and we vowed for better and worse. That's a vow between us, our spouse and God. There is only one reason God gives us to allow for divorce and that is sexual immorality committed by our spouse. Other than that, we are to trust in God and submit to His will for our lives and have faith in Him that He will be with us on the path before us and will keep His promise to make ALL things work together for our good, so long as we are His, love Him and living faithfully to Him.

We need to stop the selfish, self-centered thinking we have today that it's all about ME. It isn't all about you or me. There are others involved and a solemn vow to God. No one promised life would be easy. Muscles aren't made without resistance. Walk your days with your God and let Him develop muscles (fruit of the spirit) in your life through the challenges and be like our Lord in putting others first, not ourselves. Have faith.

For those other than spouses, remember we are that vase and God has the right to put whatever flowers into us He wishes, and all the while we can know it's for our own good!

There are so many truly ugly Smore's these days, but I simply adore these two and I'm sure you will too!
